Immaginare Alba Esteve Ruiz che impartisce ordini, che si arrabbia, che rimprovera un componente della sua brigata, mi risulta davvero difficile. Perché la chef spagnola di “Marzapane”, il ristorante romano che guida dal 2013, è molto timida e silenziosa, ma il ruolo di executive chef di un locale di successo richiede un certo tipo di atteggiamento e lei riesce a gestire nel migliore dei modi da più di 4 anni un posto divenuto famoso per alcuni piatti icona proprio di Alba.
